Jean-Christophe grew up in Northern France and worked in a bakery and as a private chef before moving to Britain in 1983. He initially ran Keith Floyd's Malster's Arms restaurant in Totnes, Devon before winning the first of two Michelin stars at Le Provence in Lymington. He went on to become head chef at the Four Seasons Hotel in London.

He went on to become head chef at the Four Seasons Hotel in London.
In 1996 Jean-Christophe founded his restaurant, Maison Novelli, in Clerkenwell, Central London. He has since opened further restaurants in London, France and South Africa and continues to expand his culinary empire. He acts as a chef patron, or consultant to various establishments and has recently movied into the gastro-pub market.
Jean-Christophe appeared in the first series of The Games in 2003 and became head chef on Hell's Kitchen in 2005. In the same year, he opened a cooking school called the Novelli Academy at his Hertfordshire farmhouse near Luton.
In 2006, Jean-Christophe appeared on The X Factor: Battle of the Stars, performing in a group with fellow chefs Aldo Zilli, Paul Rankin and Ross Burden.
